Just a quick update on my gluten free healing.
Without sounding totally gross, I can say that eating gluten free since early October has REALLY made a huge difference in my digestive tract. OH MY God! I no longer have terrible gas all the time. No more running to the bathroom. And, well, everything is more normal. I know it can take up to a year to completely heal from gluten, but so far so good. Do I have the occasional problem still? YES! Most times I can trace it to something I ate that was not specifically gluten free. I must stop assuming that something is GF when the package doesn't say it is!
Unfortunately my favorite chocolate bars, Green & Black's, are made on equipment that also processes wheat. Wonderful. I still eat some in small amounts and suffer with the gas. The gluten in them must be such a small amount that I only deal with gas, thank goodness!
Cooking for myself and my family no longer seems like such a pain in the ass. I know that most foods I make will have to be made completely from scratch. No canned soups. No packaged foods. OK I know, this is actually way more healthy for me.
