Flourless Peanut Butter Cookies

My mom gets the Southern Living magazine.  She also gets Yankee magazine as well.  How odd.  

This month's Southern Living magazine has a little section near the very back with a bunch of cookie recipes.  Since I have been gluten free for only about three months I still look at regular recipes for things like cookies.  Then I usually remember, get bummed, and move on.

THIS time though, there was a recipe called "Flourless Peanut Butter-Chocolate Chip Cookies."  Hmm, flourless.  I can DO flourless!  

We made the cookies this evening and I have to say that I am totally impressed!  Who would think that peanut butter, sugar, egg, baking soda and chocolate chips can make good cookies?  My son even said that they were the best peanut butter cookies he's had.  How's that for an endorsement?

Here's the recipe:
Flourless Peanut Butter-Chocolate Chip Cookies

1 Cup Creamy Peanut Butter
3/4 Cup Sugar
1 Large Egg
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Cup Semisweet Chocolate Chips

Mix all ingredients together and drop onto a cookie sheet lined with parchment paper.  Bake at 350 degrees for 12 - 14 minutes. Allow to cool on the cookie sheet placed on a wire rack for at least five minutes.

                                       I used a mixture of chocolate chips and peanut butter chips

  2. Oh... and I made that mac and cheese you sent me. YUMMY! I'm making it as a side for Thanksgiving, but I'm getting creative with the cheeses... maybe some monteray and munster this time. :)

  3. I have made peanut butter cookies with 1 cup sugar, one egg and one cup peanut butter all my life... gonna try your recipe next.. minus the PB chips.
