Gluten Free Pancakes

"Hey, this gluten free stuff isn't half bad!"

That's what my hubby said after I made pancakes for dinner last night.  Let me back up a bit.

Sunday hubby and I went to Whole Foods to buy some gluten free flours and the extremely expensive xanthan gum plus various other items.  Shhh, don't tell anyone that we ate something there as well even though we were heading to my parents house for dinner.  Eh, dinner was going to be a little while so I had the curry chicken salad and hubby had the mac and cheese.  Mmmmm.  I digress.  Where was I? 

Oh that's right, we bought some of their large sausages that we like to cook on the grill.  The sausages on sale were breakfast style so we decided to grill them tonight and then make some pancakes.  The sausages were really good although a tad bit zippy for me.  

Since I knew I was planning on pancakes I decided to research some gluten free recipes on the web.  The final product was a combination of several that I changed around a bit.  This is how I cook, most times, so measurements are approximate.

Gluten Free Pancakes

1 cup rice flour
1/3 cup tapioca flour
1/3 cup corn starch
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon xanthan gum

Use a whisk to whisk the dry ingredients together well

Add:
2 eggs
1/4 cup vegetable oil
2 cups buttermilk

Stir in the wet ingredients and allow to sit for a few minutes.
I used cooking spray on my non-stick griddle.


                              I added chopped pecans to some 


 
                            Almost finished! 


They came out great!  I will never miss "regular" pancakes!

  1. Yummy! For my sanity though, I'll stick with my rready made mixes from Pamela's or maybe the new Bisquick mix... which I found at Walmart supercenter tonight! (FYI) GF eating isn't all that bad once you're used to it, I have fed GF to the whole family for 3 years and they hardly know the difference-J
